Chicken thighs, drumsticks, and legs are common dishes at our house due to it being a more economical meat right now. The following recipe is a favourite of ours for chicken thighs, but could very easily be made with chicken drumsticks.
In this dish, the chicken is baked on top of the bed of rice. This adds a nice flavor to the rice.
Preheat oven to 350 degrees Farenheit.
You need a baking dish to start. Dice the onions and garlic and put the butter, garlic, and onions into the pan. Bake for 12 to 15 minutes.
You can use both skinless or skin on chicken thighs. Skin on will add more grease to the rice, so it is up to your preference. The spices will be more infused in the chicken if you take the skin off the thighs. After mixing the spice rub, put it on all sides of the chicken thighs.
Take the pan out of the oven once the onion and garlic are soft and the butter is melted. Add the rice to the pan and mix. Then lay the chicken on top. Pour the chicken broth and water around the thighs.
Cover with tin foil or lid and put in the oven. Bake covered for 30 minutes. At this point you can spread or spray some oil over the chicken if you want a crispier finish, but this is optional. Bake uncovered for 20 minutes. Cook the rice and chicken longer if not done.
