This casserole’s use of a cheese sauce keeps it nice and saucy. The hash brown patty base gets nice and crispy, which is perfect for those who don’t like a lot of potato in their breakfast casseroles. The amounts in this recipe are estimates. Tweak the amounts to fit your taste and casserole dish. We sometimes make a two to four serving version of this to use up leftover cheese sauce after making homemade pretzels.

Ingredients

  • 7-8 hash brown patties

  • 1 small cooking onion, diced

  • 3 cups meats such as bacon, breakfast sausage, and ham

  • 1 ½ – 2 doz. eggs (adjust to your preference)

  • Parsley

  • Homemade Cheese sauce (2-3 cups)

  • 1 cup shredded cheddar cheese

Directions

  • Grease a 9×13” pan. Line the base with hash brown patties. Bake at 375°F for 10 minutes.*
  • Turn then top with remaining ingredients.
  • Meanwhile, fry the onion and meats until the meats are cooked through. Layer over the hash browns.
  • Scramble and fry the eggs, being sure to not overcook them. Overcooked eggs in casseroles tend to turn green. Layer onto the casserole. Sprinkle with parsley.
  • Pour cheese sauce over the casserole.
  • Cover and bake for 30-45 minutes until bubbling at edges and heated through. For the last 5-10 minutes, top with shredded cheddar and bake uncovered.

Notes

  • *This step is optional. We like the flavour of crispy hash browns in our casserole. 
  • Breakfast casseroles can be assembled ahead of time and refrigerated or frozen. The baking time extends significantly, especially if still frozen.
