The flavour from the garlic and butter on the rice and seasoned chicken makes this recipe a definite winner. The prep time is fast and easy as well!

Chicken thighs, drumsticks, and legs are common dishes at our house due to it being a more economical meat right now. The following recipe is a favourite of ours for chicken thighs, but could very easily be made with chicken drumsticks.

In this dish, the chicken is baked on top of the bed of rice. This adds a nice flavor to the rice.

Preheat oven to 350 degrees Farenheit.

You need a baking dish to start. Dice the onions and garlic and put the butter, garlic, and onions into the pan. Bake for 12 to 15 minutes.

You can use both skinless or skin on chicken thighs. Skin on will add more grease to the rice, so it is up to your preference. The spices will be more infused in the chicken if you take the skin off the thighs. After mixing the spice rub, put it on all sides of the chicken thighs.

Take the pan out of the oven once the onion and garlic are soft and the butter is melted. Add the rice to the pan and mix. Then lay the chicken on top. Pour the chicken broth and water around the thighs.

Cover with tin foil or lid and put in the oven. Bake covered for 30 minutes. At this point you can spread or spray some oil over the chicken if you want a crispier finish, but this is optional. Bake uncovered for 20 minutes. Cook the rice and chicken longer if not done.

Serve with a side of salad and enjoy!

Packed with flavour rice and chicken! Enjoy this easy prep meal on a busy day.

Ingredients

  • 6 bone in chicken thighs

  • 1 cup chopped onion

  • 2 cloves minced garlic

  • 2 Tbsp butter

  • 1 1/2 cups uncooked white rice

  • 1 1/2 cups chicken broth

  • 1 1/4 cup hot water

  • Spice Rub
  • 1 1/2 tsp paprika

  • 1 1/2 tsp thyme

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • salt and pepper

Directions

  • Preheat oven to 350 F.
  • Put onion and garlic in baking dish and spread the the butter throughout. Put in oven and bake for 12-15 minutes.
  • Mix the rub ingredients. Rub on all sides of chicken thighs.
  • After onion and garlic is sauteed and butter is melted, take out and add rice. Mix.
  • Put chicken on top of rice and pour the broth and water around the chicken.
  • Cover with foil or lid and bake for 30 minutes.
  • Optional: spread some oil over the chicken for a nicer finish.
  • Bake uncovered for another 20 minutes. Check the chicken to make sure it is done, if not, bake longer.

Notes

  • You can substitute brown rice but remember time of cooking and amount of liquid will also need to be adjusted then.
