Slow Cooker Pulled Pork

Slow Cooker Pulled Pork

This Pulled Pork was the best flavoured pulled pork I have made and it was also very tender! It was so good that my husband was sure it should be blogged. We were asked to bring pulled pork to our family’s cottage, so that was

This Savoury Puff Pastry Strudel is perfect for an appetizer, lunch, or really any time of day food. We had it for supper and ate the whole thing in one sitting. It was just so easy to keep eating and was really hard to stop!

Must Need Products for Camping – Free Downloadable Packing list

Camping is one of the best ways to make memories with your family, but it takes a lot of stuff. My husband and I have a packing list we use to pack our camping products each time to make sure we don’t forget some of the important things. We have attached a free downloadable PDF and you can use it to pack next time you go camping!

I would also like to share some of the camping products we have found extremely helpful while camping in case you are in the need of some new camping gear. I have some specific baby items I will be promoting here as well. Even if you are aren’t into camping check them out because these aren’t just for camping!

General Camping Products:

  1. Propane Lantern These add a nice amount of light but also give a sort of romantic feel! We love our Coleman Propane Lantern and you can find one like it here.
  2. Coffee Pot Camping does not mean that you can’t have coffee. With this coffee pot you just wait till the water is boiling. Then let it boil for ten minutes and you will have a nice strong coffee.
  3. Dish Basin Currently I just have a plastic dish basin, but this collapsible one is on my to get list soon, as it would be nice to have one that doesn’t take up much space!
  4. Collapsible Water Jug We don’t have this specific one, but we have one like it. Again, it is nice to transport because it collapses. We use this for rinsing dishes and hand washing water since it has a spigot. These are different than the insulated water jugs because you can have a constant flow of water without holding a button, which makes it nice for filling a dish basin, rinsing, etc.
  5. Coleman Water Jug We also have an insulated water jug for our drinking water. This is the one we use. This of course is handy when you go to the park or beach and really, all the time during the summer. Everyone should have one of these!
  6. Campfire Grill We love our campfire grill. Unfortunately it seems to not be available anymore. I am still linking it here though, so you can see what style it is. We highly recommend this style as it works on any campfire pit you might come across.
  7. Collapsible Wagon Our wagon is from Costco and unfortunately I can’t link to it, but I do recommend it a lot! It is a great beach wagon and good whether or not you have a baby!

Baby Camping Products:

  1. Playpen This is perfect for a bed in a tent or anywhere you go with your baby away from home. We have this one and love it. It has nice pockets on the side that were super useful while camping and having minimal space in the tent.
  2. Sippy Cups Obviously there are many out there. The only reason I am linking these is because they come with lids. For that reason, they are my go to ones anytime when I am traveling and also when I want to keep the nipple clean like while camping!
  3. Portable Baby Chair Everywhere I go, people are fascinated with this chair. It is my favourite thing. It folds up compactly and can be placed on a chair inside or on the ground outside. The old version of this chair does not have a removable fabric. The new version does. Make sure you buy the new version, because being able to throw the seat in the washer is a huge game changer. I highly recommend these!
  4. Stroller I did a lot of research on strollers before I bought this one. We really do like it, and I would recommend it to anyone needing a stroller. (We bought ours at Baby’s R Us but it was this model.)
  5. Baby Bug Repellent This is a nice lotion for baby bug repellent. It can be picked up at most grocery or drug stores or you can purchase here!
  6. Mosquito Netting This works for a stroller, play yard or wagon! It gave me peace of mind when she fell asleep in the wagon and I could just put the net over her to keep some of the bugs away.
  7. Sound Machine This is the sound machine we use all the time. We bought this one specifically because it has battery or electrical options so it works when camping on a non-electrical site!
  8. Swim Diapers These are a must during the summer if you do any swimming with your baby.

Chocolate Zucchini Cake

Chocolate Zucchini Cake

The zucchini in this cake makes a very nice moist chocolate zucchini cake. However, there are a few other great ingredients that contribute to making this one of the best chocolate zucchini cakes.

Follow along and make this cake with me!

Start by preheating the oven to 325 degrees F and grease a 9×13 pan.

I have used both a stand mixer and a hand mixer for this part and both worked. Next you will want to make sure the butter is softened and cream it with the oil, and both sugars until it is nice and fluffy. Add your eggs, vanilla, and buttermilk. If you don’t have buttermilk, sub 1/2 cup milk mixed with 1 1/2 tsp vinegar or lemon juice.

In another bowl, mix together your flour, cocoa (I used dark but you could use regular), salt, baking soda, and baking powder. Stir in the chocolate chips.

Add this to the wet ingredients and mix well.

Stir in the shredded zucchini.

After this pour into the pan and bake for approximately 45 minutes or until a toothpick comes out clean.

In the meantime, make the frosting. Mix the sugar, cocoa, milk, corn syrup, butter, and salt in a small saucepan and bring to a boil. Boil for 3 minutes. Then remove it from the heat and allow it to cool.

After it has cooled down, add the icing sugar and vanilla and beat until a nice icing texture. Add more icing sugar if needed. It will be a bit of a sticky icing.

Pour it over the cake while the cake is still warm but not when it is too hot. You don’t want the icing to just completely melt into the cake.

Enjoy this chocolate zucchini cake just like this or with a side of ice cream and fresh peaches!
