Brown Butter Butternut Squash Dish
Squash is good prepared so many ways and butternut is one of my favourite. It holds its shape if needed, has a nice texture and a nice flavour, and is just all around a very good multi-use squash.
I decided to go a bit of a different route with this recipe and head back to my roots. Browned butter is something that Mennonites enjoy putting on many things, especially vegetables. I thought I would try it and this was a pretty great and relatively easy squash dish to make. The combination of caramelized onions and brown butter just make this a wonderful side dish of squash for any meal!
I like to peel my squash with a vegetable peeler. This works well with a smooth squash like the butternut. It becomes a bit more difficult with a ribbed squash like the acorn. After that I used a sharp knife, (key is sharp!) and chopped up the squash into about 1 inch chunks.

Ingredients
1 medium butternut squash – chopped into 1 inch cubes
6 Tbsp butter
1 medium cooking onion
1-2 tsp dried thyme
salt and pepper to taste
15 Ritz crackers
Directions
- Heat oven to 375℉. Put chopped squash dish into casserole dish and set aside.
- In a frying pan, melt 1 tablespoon of butter. Add the onions and fry until golden brown. Add to casserole dish and mix in with squash.
- In the same frying pan, add 5 tablespoons of butter. Cook over medium heat until butter begins to brown. Watch carefully to make sure it doesn’t burn. Pour over squash and onions.
- Sprinkle squash with thyme, salt, and pepper. Cover the dish with foil and baked for about 50 minutes.
- Remove from oven. Crush the Ritz crackers and sprinkle on top of squash. Bake uncovered for an additional 10-15 minutes. Let set for 5 minutes and serve!
