Cranberry Chocolate Chip Coffee Cake Muffins
It’s the most wonderful time of the year! You know the time of year with all the music, lights, trees, acts of kindness and giving, nativity scenes, kids’ programs, family, and of course the wonderful food and treats. If you are still working on your Christmas menus, I am here to help with this most wonderful muffin recipe, a perfect addition to your Christmas morning breakfast.
I made these and just knew I needed to share them. The fresh cranberries add a fresh and tart flavour that goes so well with the sweet crumb mixture and, of course, chocolate chips! If you want to leave the chocolate chips out of this recipe, that would be very possible, and they would still be very delicious.
When making a cake or muffin of any kind, I always like to check the recipes to see what kind of moist makers they have in them. The combination of sour cream and cranberries in these makes for a perfectly textured muffin. Remember, as with all muffins, do not over mix.
Start by mixing the streusel topping together. For this, you just need to melt the butter and then mix it with the dry ingredients (brown sugar, white sugar, salt, cinnamon, and flour).
Next mix the oil with sugar and salt. Once combined, add in a beaten egg. Then add sour cream and vanilla. Mix until everything is incorporated.
Measure and mix the cinnamon, nutmeg, flour, baking powder, and baking soda.
Add the dry ingredients to the wet ingredients and mix just until combined.
Fold in the cranberries and chocolate chips.
Then take your muffin tins, and using either muffin liners or a greased tin, fill half the muffin cup with the cranberry batter. Next add some streusel topping. Top with another layer of cranberry batter, followed by some more streusel on top.
Bake for 19-22 minutes at 375°F.

Ingredients
- Streusel Topping:
4 Tbsp butter
2/3 cup brown sugar
2 Tbsp granulated sugar
pinch of salt
1 tsp cinnamon
1/2 cup flour
- Muffins:
1/2 cup vegetable oil
2/3 cup granulated sugar
pinch of salt
2 eggs
1/2 cup sour cream
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp nutmeg
1 cup flour
1/2 tsp baking powder
1/4 tsp baking soda
1 cup cranberries
3/4 cup chocolate chips
Directions
- Preheat the oven to 375°F and line a muffin tin with liners or grease the muffin tins.
- For the streusel, use a fork to mix the dry ingredients with the melted butter until it forms clumps and crumbs and sticks together. Set aside.
- In another bowl, add the oil, sugar, and salt and mix well. Then add the egg, sour cream, and vanilla. Stir to combine.
- In a different bowl, whisk together the cinnamon, nutmeg, flour, baking powder, and baking soda. Add this to the wet ingredients and stir just to combine.
- Stir in the cranberries and chocolate chips.
- Fill the muffin tins half full with the batter. Add a generous tablespoon of streusel topping and then top with the remaining batter. Sprinkle the rest of the streusel topping on top.
- Bake for 19-22 minutes or until a toothpick inserted comes out clean.
