Inspiration for Christmas Cookies
This year I made a list of some Christmas cookies I wanted to make and it was a larger list than sometimes. I find that there are two problems with making a lot of Christmas cookies. They are time consuming and you have too many to eat within the Christmas season. The solution I found to fix both of these problems is to make smaller batches and, of course, give some cookies away.
I know a lot of people that make many more kinds of Christmas cookies than I do, but for me, five kinds or so is a lot! Today, I would like to share some of the recipes I made this year because I tried a few new ones and they are so delightful that I feel they are definitely worth sharing! Hopefully you can find some inspiration if you are still wondering what cookies are worth making.
The first one I want to share is the Espresso Millionaire Bar. The traditional millionaire bar is quite common, but me, being the coffee lover that I am, really enjoyed the coffee flavours brought into this much loved bar. I find the trick for millionaire bars is to cut them into small little pieces because you don’t need a large serving. This recipe only made an 8 x 8″ pan. I don’t own one, so I put it into a 9 x 9″ pan and it worked perfectly.

The second recipe I would like to share was a recommendation from one of my cousins who said she has made them the last few years and they are so good she was making it into a tradition. I was eager to try them because they not only sounded delicious but looked adorable and classy. I was not disappointed. We love them and will definitely be keeping these Gingerbread Sandwich Cookies around for other years!
The third cookie I would like to share is a biscotti rather than a cookie. I heard a person say when she was making biscotti that she likes to make them softer and not so hard and dry. I feel like she was possibly trying to make the wrong thing and should be making a cookie instead. Biscotti is supposed to be hard and is meant to dip into your favourite hot coffee or tea. I find it difficult to actually make a biscotti hard enough, but generally that is because I error in cutting them too big and then don’t adjust the baking time.
When I asked for favourite biscotti kinds on my Instagram page, I believe everyone that responded said cranberry orange. So that is what I made this year. I made one with a semisweet chocolate drizzle, but you could do a white chocolate drizzle instead as we all know white chocolate pairs very well with cranberries.
