Ingredients
1 cup pumpkin puree
¼ cup apple juice
½ cup maple syrup*
¼ tsp ginger
¼ tsp ground cloves
½ tsp cinnamon
¼ tsp nutmeg
Directions
- Combine all ingredients in a large saucepan and bring to a boil. Using a saucepan with tall sides will help to contain the splatter when the mixture begins to thicken. Simmer for approximately 30 minutes. The butter should become thick enough to somewhat hold its shape when stirred. The simmer will slow and the butter will start to hold larger air pockets underneath before they bubble through.
- Chill, then enjoy the spread on toast, bagels, or ice cream. You can even use the butter in lattes or as a cinnamon roll filling.
Notes
- *Substituting an equal amount of white sugar for the maple syrup will result in a butter with a brighter orange. Cook time may be shorter.
