Baked Feta Pasta – TikTok Original With a Twist

We finally did it. We made famous TikTok feta pasta. In typical Trish fashion, I couldn’t do it exactly as written though and I added a few wonderful additions. This dish was super flavourful, delicious and easy! We will be making it again in our house for sure.

Another thing that was exciting about this recipe is, it was made with my first spinach and some baby kale from my very own garden. You can use either kale or spinach in this recipe or like I did, use both! If you want to make this meatless go ahead and remove the chicken.

Use whatever kind of pasta you choose. I chose to use penne this time and it worked great but a bowtie or spiral would work well too!

Also, feel free to adapt the amount of red pepper flakes to your taste.

Baked Feta Pasta – TikTok Original With a Twist

Ingredients

  • 400 gram of pasta

  • 1/2 cup olive oil

  • 2 boxes of grape tomatoes

  • 1 block of feta (about 8 0z)

  • pinch of red pepper flakes

  • 2 chicken breasts

  • 1 tsp Italian seasoning

  • 1 pint mushrooms

  • 2 cups spinach

  • salt and pepper

  • 3 cloves of garlic

  • basil

Directions

  • Preheat the oven to 400 F. Add the tomatoes, olive oil and salt to a 9 x 13 baking pan.
  • Place the block of feta into the middle of the pan and splash with a bit more of olive oil and few pinches of red pepper flakes. Bake for 30 minutes.
  • While that is baking, cook the pasta according to directions on the package. (Save some pasta water for later.)
  • Chop and season the chicken with salt, pepper and Italian seasoning. Fry in a frying pan until cooked through. Set aside.
  • In the same frying pan add a bit of oil and fry mushrooms. Season with salt and pepper.
  • After the 30 minutes is up, crank the heat up to 450 F. Bake for another 5-10 minutes or until the tomatoes and feta are nicely browned.
  • Remove from oven and immediately add garlic and basil and stir. Add pasta, chicken, mushrooms and spinach and stir.
  • Season with salt and pepper if needed. (If you find it dry add a bit of the pasta water and stir.)

This Firecracker Chicken is a delicious sweet and spicy dish that could easily pass for takeout. If you aren’t big on spicy, you could use this method of preparing takeout chicken but use an orange, honey garlic, or whatever sauce you choose!

To begin, I cut the chicken breasts into about 1 inch pieces. Next I sprinkled them with salt and pepper. I measured the corn starch and sprinkled it over the chicken, then tossed the chicken so it was well coated.

Next I beat two eggs. I got out my frying pan, put the oil in it, and heated it over high heat. Next I dipped the pieces of chicken in the egg mixture and tossed them into the hot frying pan. I fried them just until they were nicely browned on both sides, barely more then a minute, but that will depend on how hot your pan is. After the chicken is nicely browned, spread into a 9 by 13 inch pan. You may need to do the frying in a few batches. If your pan dries up, add more oil.

Once all the chicken is fried and in the pan, mix the sauce and pour it over the chicken. Stir the chicken so the sauce is nicely spread throughout. Bake in the oven at 350 F for 35 minutes, stirring once in the middle of the cooking time.

Enjoy this with a bed of rice and some steamed vegetables or your choice of sides.

Better Than Takeout Firecracker Chicken

Sweet and Spicy chicken that gives you the takeout flavours out of your own home!

Ingredients

  • 2 large chicken breasts

  • salt and pepper to taste

  • 1/4 cup cornstarch

  • 2 eggs, beaten

  • 3 Tbsp vegetable oil

  • 1/4 cup Sriracha sauce

  • 1/2 cup brown sugar

  • 1 Tbsp rice vinegar

  • 1/4 cup soy sauce

Directions

  • Preheat the oven to 350 F and grease a 9×13″ pan.
  • Chop the chicken breasts into 1″ pieces and sprinkle with salt and pepper. Sprinkle the cornstarch over the chicken and toss to coat evenly.
  • Dip the chicken pieces into the beaten egg.
  • In a large frying pan, heat the oil over high heat. Place the chicken in single layers and fry both sides just until brown. You may need to work in batches. Add more oil if needed.
  • Place the chicken in a single layer in the 9″x13″ pan.
  • Mix hot sauce, brown sugar, rice vinegar, and soy sauce in a small bowl. Pour the sauce over the chicken and bake for 35 minutes, stirring halfway through.

Notes

  • Gluten free if you use a gluten free soy sauce!

I was beginning to think about Valentine’s Day a few weeks back and realized that it would likely be a different sort of Valentine’s then what we had in the past. Babies change things and with a catnapping four month old, I didn’t see a fancy dinner being made here.

After having a conversation with my husband one day, I learned that he still thinks about a meal he had at a restaurant when we were in Florida a year ago. I decided for my Valentine’s dinner for him, I would try to recreate this memorable meal.

I knew by looking at the ingredients of Jamaican Rice and Peas, that this would likely not be my favourite dish. However, I was excited about the Jerk Chicken and I am sharing that recipe with you here.

To begin, I got out the chicken drumsticks. Chicken drumsticks are a common meal in our house, since they are easy to make many different ways, an economical meat, and also so tasty!

I placed the chicken on a baking sheet with tin foil and patted the drumsticks dry with a paper towel. I then poked the chicken with a fork.

I then mixed the spices and oil and rubbed it on the chicken.

I put my chicken in the preheated oven and baked them for 35-40 minutes. Different ovens have different heats so you can bake accordingly to your oven. Chicken needs to have an internal temperature of 165 degrees Fahrenheit but for bone on chicken I like to bake it a bit longer so it comes off the bone easily.

The chicken has a nice, slightly sweet and spicy taste. Enjoy with your favourite side dish of rice and/or salad.

Jamaican Jerk Chicken

Ingredients

  • 10 chicken drumsticks

  • 1/3 cup olive oil

  • 2 TB brown sugar

  • 1 TB dried thyme

  • 2 tsp ground allspice

  • 2 tsp paprika

  • 1 tsp cinnamon

  • 1 tsp ground ginger

  • 1 tsp cayenne pepper

  • 2 tsp salt

  • 1/2 tsp black pepper

Directions

  • Preheat oven to 425F. Place chicken on baking sheet. Wipe the chicken with paper towel to get rid of excess moisture. Poke the chicken with a fork.
  • Combine all the rest of the ingredients to make a rub and rub it on the chicken drumsticks.
  • Bake for 35-40 minutes or until brown and cooked to at least 165F internal temperature.
