Sometimes I crave some good banana muffins. I always crave coffee so why not put those two together. The coffee in these is not a strong flavour, but it adds a nice little extra. The muffins are moist and have a wonderful texture. Also, who doesn’t love chocolate chips? I am a definite semi-sweet chocolate chip only fan (no milk chocolate for me) and if you want to get really picky, PC Decadent semi-sweet chocolate chips are the best, but use whatever your family’s favorites are.

For some, banana muffins or loaf may happen when you have bananas that are ripening faster then you can eat them and need to be used. For others, you may need to buy bananas and hide them so you have them to use for baking. This is the case in our house. My husband makes sure to always finish the bananas so I have to make sure to tell him if I want them for baking.

Banana is often used to naturally sweeten things so you can avoid the sugar. This recipe is not one of those. While I understand taking out the sugar may be better for you, its not going be the same muffin. Some people don’t realize that sugar in baking has a lot to do with the texture. The texture of baking will be drastically different when taking out the sugar. This becomes especially evident when baking isn’t eaten the same day it is made.

So no, these are not healthy banana muffins, but they are delicious! Remember that muffins don’t like to be over mixed. Mix the dry and wet ingredients just until combined. This will also help with the texture.

Muffins are super easy to whip together and a delicious add-on to your breakfast or even as a snack! Enjoy!

Delicious, moist and quick to make muffins that all will enjoy!

Ingredients

  • 1 1/2 cups mashed banana (4 medium bananas)

  • 1/2 cup granulated sugar

  • 1/4 cup brown sugar

  • 1/2 cup butter, melted

  • 1/4 cup milk

  • 1 egg

  • 1 tsp vanilla

  • 1 1/2 cups all-purpose flour

  • 2 tsp instant coffee powder

  • 1 1/2 tsp baking soda

  • 1 tsp salt

  • 1 cup semi-sweet chocolate chips

Directions

  • Preheat oven to 350 F.
  • Spray a muffin tin with cooking spray or use liners.
  • Mix bananas, sugars, butter, milk, egg, and vanilla in a medium sized bowl.
  • In another bowl, combine flour, instant coffee powder, baking soda, and salt.
  • Pour the wet ingredients into the dry and stir just until combined. Fold in the chocolate chips.
  • Fill muffin cups about 3/4 full.
  • Bake for 20 – 25 minutes. Prick with a toothpick to make sure it comes out clean.
  • Cool and enjoy!

I became a huge fan of chicken lasagna after I came up with this recipe. Not only is it extremely delicious, but it can be put together in a few short minutes anytime of the day and be ready to put in the oven an hour before you want to eat it. For that reason, I have used it twice to host recently. I could make it in the morning, put it in the fridge for the day, and spend time visiting with my guests while it cooked later on. No fuss hosting is the best hosting!

Also, get yourself a husband who picks the chicken apart for you and that makes this recipe all the easier! We like to buy whole chicken or turkey when it is on sale and then put it in our freezer. Then I will pull it out when I am in the mood for a roast, and roast the bird. I keep the leftovers in the freezer for many different casseroles or meals. When you stretch a bird between 2-4 meals it becomes very economical.

This dish has lots of flavour. Some chicken lasagnas can be quite bland, but with this one, you will not be disappointed.

Start by mixing together the Alfredo sauce, lemon juice, Caesar dressing and pepper. I prefer the Classico Four Cheese Alfredo sauce, but choose whatever kind you like or make your own!

After you have that mixed, add the chopped red peppers, chopped rotisserie chicken, and spinach to the sauce, and mix it all together.

Grease a 9 by 13 pan. Lay three oven ready lasagna noodles down. Spoon 1/3 of the sauce onto the noodles. Then top with 1/3 of the cheese mixture. I like to use a Tex Mex shredded cheese mixture for this casserole, but again, there is some flexibility there. However, I would recommend a mixture of cheeses. Repeat these steps twice. Lastly, sprinkle the top with Parmesan cheese and a bit more pepper.

Cover the pan with foil and bake for 45 min at 375F.

Uncover and bake for another 5 min. Take out of the oven and let rest for 10-15 minutes.

This lasagna is a pretty dish with its green spinach and red peppers. Serve it with your choice of salad!

Ingredients

  • 9 oven ready lasagna noodles

  • 410 ml jar Alfredo sauce

  • 1/4 cup Caesar dressing

  • 2 TB lemon juice

  • 1/2 tsp black pepper

  • 3 cups chopped rotisserie chicken

  • 2-3 cups baby spinach

  • 1 cup red peppers diced

  • 2 cups shredded Tex Mex cheese

  • 2 TB Parmesan Cheese

Directions

  • In a large mixing bowl, whisk together the Alfredo sauce, Caesar dressing, lemon juice, and pepper until evenly combined.
  • Add chicken, spinach, and peppers and stir.
  • Grease 9×13” pan with cooking spray.
  • Layer 3 noodles evenly over bottom.
  • Evenly spread 1/3 of chicken mixture over noodles.
  • Sprinkle with 1/3 Tex Mex cheese blend.
  • Repeat the layers twice and finish off with the remaining cheese and sprinkle Parmesan and pepper on top.
  • Cover the dish with tinfoil and bake at 375 for 40-45 minutes.
  • Uncover and bake for an additional 5-10 minutes.
  • Let lasagna rest for 10-15 minutes before slicing and serving.
