The Best Cheese Sauce

This is our favourite dipping sauce for homemade soft pretzels. It’s also great in breakfast casseroles or for nachos. The addition of sour cream aids with providing the tangy taste of cheddar, even if using a cheaper flavoured cheddar cheese. 

The Best Cheese Sauce

Ingredients

  • 2 tbsp. butter

  • 1 small onion, diced (¼-½ cup)

  • 1 ½ – 2 tbsp. corn starch, depending on desired thickness

  • 1 ½ cup milk

  • ½ cup sour cream

  • Salt and pepper, to taste

  • Pinch cayenne (optional)

  • 1 ¾ cup grated cheddar cheese

Directions

  • In a medium saucepan, sauté onion in butter.
  • Whisk in the corn starch, cooking for 2 minutes.
  • Whisk in milk, making sure to incorporate the roux into the milk.
  • While whisking, bring to a boil.
  • Reduce heat and simmer for 5-8 minutes until thickened.
  • Stir in sour cream. Heat sour cream through.
  • Season with salt, pepper and cayenne.
  • Remove from heat and add cheese, stirring just to combine.

Notes

  • By using cornstarch as the thickener you can keep this gluten free.
