Easy Baked Shrimp Fajitas are a delightfully, tasty change from normal chicken fajitas and easy to make too!
The one seafood that I am always a fan of is shrimp. I like it grilled, fried, or baked with rice, pasta, or in a wrap. My husband isn’t quite as huge a fan as I am of shrimp, but even he enjoys a good shrimp fajita.
Shrimp is super easy and quick to make. Whether you use precooked or raw shrimp, it doesn’t take long to cook up some shrimp.
Easy Baked Shrimp Fajitas can be very basic or you can get extra bold and make a yummy sauce for them. I am going to give you an easy recipe that can be baked quickly.
Preheat the oven to 450 F.
Chop the onions and peppers. In a bowl, toss with the shrimp, oil, and spices. You want your shrimp to be tailless. You can use frozen shrimp but then you will have a lot of extra liquid, so I recommend thawing them first.
Spray a baking sheet with cooking spray and spread the mixture on the sheet. Bake for about 8 minutes and then broil for just a couple minutes to crisp things up.
Squeeze some fresh lime juice over the mixture.
Put in a tortilla wrap with cilantro, sour cream, and whatever other toppings you prefer in it. Enjoy immediately.
