Strawberry French Silk Pie

Fresh strawberries are here! Unfortunately, fresh Ontario produce is not as easy to access as it once was in my life. I grew up extremely spoiled in this aspect. Whatever was freshly grown in Ontario, I had ready and easy access to the day it arrived at my dad’s produce store. However, the last year has brought a lot of change and one of those was no longer having easy access to that produce. Unfortunately, I now live in a city where I need to look quite hard to find Ontario produce. It makes me sad because of the following two reasons.

  1. I love to support locally grown food and think that is very important. I am hoping more people will see the importance of that with this Covid19 season we are living in. The price tag is often a bit higher on locally sourced food then otherwise, but if you are a fan of our minimum wage height then you should be supporting the local food growers.
  2. The fresher the produce, the riper it can be picked, meaning that it will be better. If you don’t believe me, then ask my baby. I had been trying to feed strawberries to her the last little while. I always found them in her bib not eaten. My mom visited and brought some Ontario berries with her and we fed her those. Just like that she ate them and more than one piece. Yup, there is a difference!

Ok, rant over! I took a drive out to a local farm about 35 minutes from our place and picked up a flat of strawberries and a few pints of raspberries. The berries looked gorgeous. It was time to find a dessert recipe to blog with these gorgeous berries.

I decided on a French Silk pie with strawberries in it. I have made this pie a number of times and usually I would make it in a normal pie crust and would put raspberries on top. This time I adapted it by putting it in a Oreo based crust and putting strawberries under the French Silk. It was delicious and I am going to share the recipe with you here.

This chocolate covered strawberry pie is a perfect decadent dessert for your next event!

Ingredients

  • Oreo Pie Crust
  • 6 Tbsp butter

  • 1/8 cup semisweet chocolate chips

  • 2 cups Oreo cookie crumbs

  • 2 cups strawberries, trimmed and halved

  • Filling
  • 2/3 cup sugar

  • 2 eggs

  • 2 ounces unsweetened chocolate, melted

  • 1 tsp vanilla extract

  • 1/3 cup butter, softened

  • 2/3 cup heavy whipping cream

  • 2 tsp icing sugar or confectioners’ sugar

Directions

  • For the crust:
  • Spray a 9 inch pie dish with cooking spray.
  • Place the butter and chocolate chips in the microwave and melt. Stir until smooth.
  • Combine butter mixture with cookie crumbs until evenly moistened.
  • Press the crumb mixture into the pie plate. Freeze for about 30 minutes.
  • Arrange the strawberry halves in a single layer in the bottom of the crust.
  • For the filling:
  • In a small saucepan, combine sugar and eggs. Cook over a low heat, stirring constantly until it reaches 160 F and coats the back of a metal spoon.
  • Remove from the heat and stir in chocolate and vanilla until smooth. Cool until the mixture is lukewarm (90 F), stirring occasionally.
  • In a different bowl, cream butter until light and fluffy. Add to the chocolate mixture and beat on a high speed for 5 minutes. It should be light and fluffy.
  • In another bowl, beat the heavy cream until it thickens. Add the icing sugar and beat until stiff peaks. Fold this into the chocolate mixture.
  • Pour into the crust. Chill for at least six hours.

Notes

  • Can be made with a regular pie crust and with or without strawberries as well.
