Bacon Cabbage Fried Rice

Bacon Cabbage Fried Rice

Not much can go wrong when you are frying cabbage with bacon. My husband found this recipe for me and I adapted a number of things that I thought may improve it and to make it my own.

This rice has a nice Asian flavour but a bit lighter than your typical chicken fried rice since it is half cabbage and makes for a really good side dish. However, it could easily be adapted to a main dish meal as well by adding some eggs or more meat.

  • 3 slices of thick cut bacon, chopped

  • 6 green onions, chopped, whites and greens separated

  • 5 cups shredded cabbage

  • 4 cloves garlic, minced

  • 4 cup cooked white rice

  • 1 TB fish sauce

  • 1 TB soy sauce

  • 1/2 cup frozen green peas

Directions

  • Heat 2 TB of oil in a frying pan or wok over medium-high heat. Add the chopped bacon and fry until bacon is cooked. Transfer to a different bowl.
  • Add the green onion whites to the pan. Cook until soft. If the pan looks dry drizzle in some more oil. Add the cabbage, broccoli, peas and pinch of salt. Stir frequently until cabbage is soft. Stir in garlic and fry for another 1 – 2 minutes. Transfer to the bowl with the bacon.
  • Add the other 2 TB of oil to the pan and raise heat to high. Add rice and toss to coat with oil. Drizzle with fish sauce and soy sauce. Fry till rice is nicely fried, 1 to 4 minutes.
  • Stir in bacon mixture. Drizzle with sesame oil and stir. Top with green parts of green onions and serve!

Notes

  • You can add chicken or eggs to recipe to make a full meal.
