Baked BBQ Chicken Legs

Sometimes I am in the mood for a good BBQ chicken leg, but then its too cold to BBQ or I am out of propane or something. This recipe has a nice smoky flavour that gives it a BBQ feel, but can be made in an oven. The seasoning mix is quick to put together and easy to make.

This could also be used on drumsticks or thighs, but the cooking time will need to be shortened as they are smaller pieces of meat.

If you don’t have liquid smoke, you can omit it, but it is delicious in dishes like this, or in meatballs, meat loaf and many other things and so it’s good to have in the pantry. Order some here if you would like.

Ingredients

  • 6 Chicken legs

  • 1/2 cup olive oil

  • 1 tsp garlic powder

  • 1 tsp oregeno

  • 1 tsp cayenne pepper (add more for more heat)

  • 2 tsp smoked paprika

  • 2 tsp seasoning salt

  • 1 tsp chili powder

  • 1/2 tsp onion powder

  • 1/2 tsp ground black pepper

  • 1/2 tsp liquid smoke

  • 1 tsp dried parsley

Directions

  • Preheat oven to 350 degrees F.
  • Position chicken quarters on aluminum foil or parchment lined baking sheet.
  • In a bowl, mix the ingredients together and brush onto the chicken pieces.
  • Bake for 90 minutes. Serves with choice of sides.
