Pulled Pork Hash – skillet for any meal of the day!

Are you needing something to do with leftover pulled pork after you made this delicous pulled pork recipe? If so, there are many ideas I could give you like pulled pork quesadillas, pulled pork pizza, or this wonderful Pulled Pork Hash!

I made this with regular potatoes, but you could very easily substitute sweet potatoes. I personally think sweet potatoes and pulled pork is a delightful combination, but since my husband is only a slight fan of sweet potatoes and I had some old regular potatoes that needed to be used, this is not a sweet potato recipe.

To start, boil the potatoes so that they are soft but not overcooked. If the potatoes are overcooked too much, they will turn to mush when you fry them. Also preheat your oven to 375 degrees Fahrenheit.

While your potatoes are boiling, chop and fry the peppers, garlic, and onions. Jalapenos are generally not a super spicy pepper, but there can be big variances between them. My garden ones aren’t too hot this year. I put two of them in this dish and my 10 month old didn’t seem to mind.

Once the vegetables are translucent, add the pulled pork and spices. Stir and just heat through for a bit then add the potatoes. Try to get the potatoes toward the bottom of the skillet so that they get a bit crispy. Fry them for about 10 minutes or so, stirring only occasionally.

Makes some wells in your skillet. I used a soup ladle for this part. Top the skillet with shredded cheese. Crack eggs into the wells and put the skillet into the oven. Bake for 5 to 10 minutes. Make sure to check your eggs so they aren’t too runny or too hard for your liking.

Ingredients

  • 4-6 medium potatoes, peeled and cubed

  • 1 large red pepper

  • 1 medium onion

  • 2 Jalapeno peppers

  • 2 cloves garlic

  • 2 cups pulled pork

  • 2 teaspoons paprika

  • salt and pepper to taste

  • 1 1/2 cup cheddar cheese

  • 4 eggs

Directions

  • Preheat oven to 375 F.
  • Boil the potatoes so that they are soft but not overcooked
  • Chop and fry the peppers, garlic, and onions. Add the pulled pork and seasonings and stir.
  • Add the boiled potatoes and try to get to bottom of the pan. Fry for about ten minutes or until a bit browned and crispy.
  • Make four wells (I used a soup ladle). Top with cheese. Break an egg into each well.
  • Bake for 5-10 minutes, checking to make sure egg is not too runny or too hard.
  • Serve immediately.

Notes

  • If you don’t have an oven safe skillet you could fry the eggs in a separate frying pan and just top your serving.
