Sweet Potato Taco Hash

Since I got married, grocery shopping has been a joint event for my husband and I. We both enjoy it and it was a relaxing end of week activity for us. However, since we are now avoiding filling up the stores with unnecessary people, we have only had one of us go shopping the last few weeks and since he can get a student discount, it means he is the grocery shopper these days. For the most part, he comes home with what I put on the list, but every now and then there may be an extra box of cereal or a very large bag of sweet potatoes. Yes, a ten pound bag of sweet potatoes is what made me start looking up different sweet potato recipes and what inspired the recipe I have for you here.

Interestingly, my husband used to say he doesn’t like sweet potatoes. I didn’t understand how someone could like squash so much but not sweet potatoes but he didn’t like the ideas of potatoes being sweet. I told him to think of them as a squash instead of a potato and he now enjoys them a lot! So if you or a family member doesn’t like sweet potato, but enjoys squash you can try that too!

That being said, I believe this recipe would be very good with regular potatoes too!

I started by chopping all my vegetables so they were all prepared and ready to go.

The first step is to prepare your hamburger. Throw it in the frying pan with your taco seasoning and water over medium high heat. Fry until brown. Remove the hamburger from pan and set aside.

Note: You can use whatever taco seasoning you choose. While I often use the packages of taco seasoning, I do like to have some of my own mixed for recipes like this that ask for a certain amount or for when I don’t have any on hand. You can go here to see what I mix for taco seasoning if you like.

Put some oil in the frying pan and add your diced sweet potato. Sprinkle with salt and pepper and fry the sweet potatoes till they are almost done. They will fry some more with the vegetables so you don’t want them too soft yet.

Add the peppers, onions, and mushrooms to the sweet potatoes. Add some more oil and fry until all vegetables are done. Return your hamburger to the pan and add the spinach. Fry just until spinach is wilted.

In a separate pan fry your eggs to your liking and place them on top of the hash. Enjoy!

A lighter calorie dish that brings a little bit of breakfast into supper!

Ingredients

  • 1 lb of ground beef

  • 3 Tbsp taco seasoning

  • 1/4 cup of water

  • 1 Tbsp of vegetable oil

  • 2 small sweet potatoes peeled and chopped (2 1/2 to 3 cups)

  • 1 red sweet pepper, diced

  • 1 medium cooking onion, diced

  • 2 cups sliced mushrooms

  • 2 cups spinach

  • 4 – 6 fried eggs

Directions

  • Fry your beef with taco seasoning and water over medium-high heat until beef is browned. Set aside.
  • Using the same frying pan, add half of the vegetable oil and the sweet potatoes. Sprinkle with salt and pepper. Fry until the potatoes are almost fully cooked which is about ten minutes.
  • Add the rest of the oil, onions, sweet peppers, and mushrooms and saute until all vegetables are tender. Add more oil if pan is too dry.
  • Fold in spinach and taco meat and continue to cook until spinach is wilted.
  • Fry eggs and place on top of hash.

Notes

  • The hash is very good without the eggs too.
