Taco Zucchini Boats

Zucchini is one of those things that when it grows….it GROWS! If you know…you know! I happen to have two zucchini plants this year and I have been trying to find all kind of creative ways to use my abundance of zucchini. This zucchini boat recipe was simple, quick and tasty and so I am going to share the recipe with you in case any of you are in need of ways to use your zucchini.

Zucchini is also a great way to make low carb meals. I use ground beef in this recipe but it can easily be substituted with ground turkey or really any meat of your choice.

Depending how many zucchini boats you make with this recipe you might have extra filling. Some great ideas to use up this extra filling are the following:

  1. Burrito bowls – add some rice to the filling and top with salsa, sour cream, guacamole or avocado, tomatoes, cheese, lettuce etc.
  2. Tacos – Throw in a tortilla wraps or shells and top with salsa, sour cream, guacamole or avocado, tomatoes, cheese, lettuce etc.
  3. Stuff a different kind of squash like acorn, spaghetti or butternut and top with cheese.

Taco Zucchini Boats

These zucchini boats are perfect way to use your speedily growing zucchini. They are quick and simple and tasty for an easy weeknight supper.

Ingredients

  • 3 zucchini (amounts will depend on size and how much of it you want)

  • olive oil

  • salt and pepper

  • Filling:
  • 1 lb ground beef

  • 1 medium onion

  • 2 cloves minced garlic

  • 2 TBS taco seasoning

  • 1 cup corn

  • 2 cups black beans

  • 1 cup salsa

  • 1/4 cup water

  • Cheese blend of choice

Directions

  • Preheat oven to 400 F.
  • Half the zucchini the long way and spoon out some of the center. Spoon out enough to make a nice crevice but not too much that the zucchini is falling apart.
  • Lay on baking sheet face up. Drizzle with olive oil and salt and pepper. Put in oven for 10 – 15 minutes or until zucchini is tender but not too soft!
  • For Filling:
  • Fry the ground beef, onion and garlic. Once half done add the taco seasoning.
  • Once meat is browned add the corn, beans, salsa and water. Let simmer 10 minutes or until water is mostly evaporated.
  • Top the zucchini boats with filling. Sprinkle with cheese of choice.
  • Put back in the oven for 5-10 minutes or until cheese is melted.

Notes

  • You can mix the zucchini that you scooped out with the filling if you choose.
