I was looking for an easy and quick meal to make one evening and found a version of this dish in one of my recipe books. I adapted it and my husband deemed it blog worthy so here it is!
A few things I loved about this recipe were not only that it was quick, but it also used up a number of vegetables that were sitting in my fridge/freezer and it was quite good for staying under our calorie budget.
Start by preheating your oven to 350 degrees. Choose an oven safe pan with a lid. This could be a roasting pan or a cast iron dish as I chose here. If you don’t have one of these, they are handy, especially for some specialty breads. Here you can find a nice one on Amazon if you are interested in owning one.
Mix your rice and chicken broth in your pot. I used Uncle Ben’s White Rice, but you could also choose to use a brown rice if you would like. Put your pot in the oven for 30 minutes.
While that is happening, fry your hamburger and onion. A lot of recipes like this won’t tell you to season your meat. I am very much a fan of seasoning, and in a recipe like this, find it bland with no seasoning. Add some salt and pepper to your hamburger while you are frying it.
Chop your carrots, celery, peppers and prepare your corn and peas.
Once rice is finished, mix your hamburger, vegetables and seasonings with the rice and throw it in the oven for another 30 minutes.
