Cajun Rice Bowl

I was looking for an easy and quick meal to make one evening and found a version of this dish in one of my recipe books. I adapted it and my husband deemed it blog worthy so here it is!

A few things I loved about this recipe were not only that it was quick, but it also used up a number of vegetables that were sitting in my fridge/freezer and it was quite good for staying under our calorie budget.

Start by preheating your oven to 350 degrees. Choose an oven safe pan with a lid. This could be a roasting pan or a cast iron dish as I chose here. If you don’t have one of these, they are handy, especially for some specialty breads. Here you can find a nice one on Amazon if you are interested in owning one.

Mix your rice and chicken broth in your pot. I used Uncle Ben’s White Rice, but you could also choose to use a brown rice if you would like. Put your pot in the oven for 30 minutes.

While that is happening, fry your hamburger and onion. A lot of recipes like this won’t tell you to season your meat. I am very much a fan of seasoning, and in a recipe like this, find it bland with no seasoning. Add some salt and pepper to your hamburger while you are frying it.

Chop your carrots, celery, peppers and prepare your corn and peas.

Once rice is finished, mix your hamburger, vegetables and seasonings with the rice and throw it in the oven for another 30 minutes.

A nice lighter one dish supper for a busy day. Lots of fresh tasting vegetables.

Ingredients

  • 4 cups chicken broth

  • 2 cups white rice

  • 1 lb ground beef

  • 1 medium cooking onion

  • 1 cup chopped carrots

  • 1/2 cup chopped celery

  • 1/2 cup frozen corn

  • 1/2 cup frozen peas

  • 1/2 cup chopped sweet peppers

  • optional: 1 jalapeno pepper

  • 1 tsp salt

  • 2 tbs cajun seasoning

Directions

  • Preheat oven to 350 degrees.
  • In a oven safe pot, combine broth and rice. Mix well. Cover and bake for 30 minutes.
  • While that is baking, fry your hamburger and onions until completely cooked. Drain if needed.
  • Add your veggies, beef mixture, and seasonings to your rice and mix well.
  • Cover and bake for 30 minutes.

  • I used brown rice here, which I think skewed the cooking time, so I had to cook longer and add more liquid. I think I would also fry the veggies with the hamburger next time so they are more cooked. I’m not sure what happened. They just had a little too much crunch for our 10-month-old. I love that it is a one-dish meal though and plan to try it again with white rice.

    • Brown rice does take longer. I should have mentioned that in the post and I didn’t think about it taking more liquid with brown but that makes sense. The veggies could easily be fried with your hamburger, if you like it softer. Also, if you used frozen carrots versus fresh they would likely be softer as well!
