Jamaican Jerk Chicken

I was beginning to think about Valentine’s Day a few weeks back and realized that it would likely be a different sort of Valentine’s then what we had in the past. Babies change things and with a catnapping four month old, I didn’t see a fancy dinner being made here.

After having a conversation with my husband one day, I learned that he still thinks about a meal he had at a restaurant when we were in Florida a year ago. I decided for my Valentine’s dinner for him, I would try to recreate this memorable meal.

I knew by looking at the ingredients of Jamaican Rice and Peas, that this would likely not be my favourite dish. However, I was excited about the Jerk Chicken and I am sharing that recipe with you here.

To begin, I got out the chicken drumsticks. Chicken drumsticks are a common meal in our house, since they are easy to make many different ways, an economical meat, and also so tasty!

I placed the chicken on a baking sheet with tin foil and patted the drumsticks dry with a paper towel. I then poked the chicken with a fork.

I then mixed the spices and oil and rubbed it on the chicken.

I put my chicken in the preheated oven and baked them for 35-40 minutes. Different ovens have different heats so you can bake accordingly to your oven. Chicken needs to have an internal temperature of 165 degrees Fahrenheit but for bone on chicken I like to bake it a bit longer so it comes off the bone easily.

The chicken has a nice, slightly sweet and spicy taste. Enjoy with your favourite side dish of rice and/or salad.

Ingredients

  • 10 chicken drumsticks

  • 1/3 cup olive oil

  • 2 TB brown sugar

  • 1 TB dried thyme

  • 2 tsp ground allspice

  • 2 tsp paprika

  • 1 tsp cinnamon

  • 1 tsp ground ginger

  • 1 tsp cayenne pepper

  • 2 tsp salt

  • 1/2 tsp black pepper

Directions

  • Preheat oven to 425F. Place chicken on baking sheet. Wipe the chicken with paper towel to get rid of excess moisture. Poke the chicken with a fork.
  • Combine all the rest of the ingredients to make a rub and rub it on the chicken drumsticks.
  • Bake for 35-40 minutes or until brown and cooked to at least 165F internal temperature.

  • I want to comment on this recipe, but I can’t give a good review because I ruined it by accidentally(??) using chicken quarters that weren’t fully thawed (I can’t remember if I forgot I didn’t have chicken drumsticks in the freezer or WHAT and thought quarters would work just fine?), and it took a lot longer to cook and that is all my fault… The seasonings were good, and I want to try this recipe again with drumsticks. 🙂

    • Aw, I am sorry, it didn’t work out as hoped. Chicken quarters will definitely take longer to cook. Bone in chicken needs to be cooked longer so it comes off the bone nicely. Sometimes the temperature of bone in chicken can be safe to eat but it has a funny texture if not cooked long enough or at too high a heat and too fast. Not sure what happened to you but I have also had some chicken quarters in my life that I don’t wish to repeat. Always disappointing!
