Delicious Egg Roll in a Bowl

Growing up I worked along side a number of different cultures, some of which included both Laos and Cambodian. They often brought me different food items to try and from little on up I learned to love the Asian flavours. While I don’t believe I have mastered recreating any of them, I do try to cook with some of the same spices and sauces occasionally.

This recipe is a wonderful taste of Asian while also being healthy, easy and budget friendly. You can quickly whip up this delicious bowl on a busy weeknight.

To start you can gather your ingredients. Like with any stir fry type meals there is some flexibility in what you choose to put into the dish. The following is what I chose for mine.

Cabbage, Carrots, Red Peppers, Mushrooms, Ground Pork, Garlic, Red Onion

The type of onion you use is up to you. Also, a way to make your prep for this recipe even easier is by buying a coleslaw bag which is already pre-shredded. The nice thing about those bags is that they also come with red cabbage which adds nice colour to this dish. But since I already had cabbage on hand and because it is more budget friendly to buy a head of cabbage then a bag, I just used green cabbage.

After chopping all my ingredients, I got together my spices and sauces as pictured in the following picture.

I am big fan of the ginger paste found in the fresh herb part of your grocery store. The paste lasts a long time in your fridge and is always available when you need it and gives a nice fresh ginger flavour without having to buy fresh ginger. If you do not have fresh ginger or ginger paste, ground ginger works as well.

After all my ingredients were gathered, I was ready to start cooking! I got out my large wok and heated the pan on medium high heat and threw in my pork, adding salt and pepper and frying it until no longer pink. I love my wok for this type of thing. Here is a link to a good wok on Amazon. I find the high sides are wonderful for keeping everything in the pan, but a large frying pan will work too.

After the pork was fried, I added the rice vinegar, the sesame oil and all of the vegetables (except the cabbage) and fried, stirring frequently, until all vegetables were tender.

Once that was completed, I was ready for the final step. I added the garlic, ginger, hoisin sauce, soy sauce and cabbage to the wok and fried until the cabbage was wilted. This will take 5-10 minutes, depending on how coarsely shredded or cut your cabbage is.

Once plated, you can choose to top with green onions, red pepper flakes or Sriracha sauce. Enjoy!

Ingredients

  • 1 pound ground pork

  • 1 medium sized red onion, diced

  • 1 large red pepper

  • 2 cups coarsely grated carrots

  • 2 cups sliced mushrooms

  • 1 tablespoon sesame oil

  • 1 tablespoon rice vinegar

  • 2 cloves of fresh garlic, minced

  • 1 tablespoon ginger paste or 1 Tsp ground ginger

  • 1/4 cup soy sauce

  • 1 tablespoon hoisin sauce

  • 4 cups chopped or coarsely shredded cabbage

  • salt and pepper to taste

Directions

  • Heat large skillet or wok over medium-high heat. Add ground pork, season with salt and pepper and cook, stirring until no longer pink. Drain if needed. Return meat to skillet.
  • Add mushrooms, carrots, red peppers, onions, sesame oil and rice vinegar to wok. Cook, stirring for a few minutes until mushrooms are fried and onions and carrots are tender.
  • Add garlic, ginger, soy sauce, hoisin sauce and cabbage to the wok. Cook, stirring, for about 7-10 minutes, or until cabbage is wilted.
  • Season with salt and pepper to taste. Serve with red pepper flakes or siracha sauce if desired.
